β™‘RECIPE (12cookies)
1 1/2 cups of porridge oats
2 ripe mashed bananas
1/3 cup of Raisins (or chocolate chips)
1 Tbsp of dates syrup (agave, maple syrup or honey)
1 Tbsp of flaxseeds (optional)


β™‘METHOD
Preheat the oven at 200 degrees Celsius
Add all the ingredients into a container and mix it well. I divided it into 10 small cookies, but you can make it bigger or smaller if you wish!
Place it into a baking tray lined with parchment paper and into the oven for 5 to 10 minutes, depending on the size of the cookies.
β™‘TIPS: If you don’t like banana it can be made with apple sauce instead!

β™‘RECIPE (for the stir fry – serves 3)
200g of tempeh marinated (2 Tbsp of tamari, juice of half a lime, 1 Tbsp of dates syrup. marinate the tempeh for 30 minutes before cooking)
1 white onion sliced
2 inches of fresh gated ginger
2 cloves of garlic chopped
1 red pepper sliced
1 yellow pepper sliced
1 medium carrot sliced
6 closed cups mushroom sliced
6 broccoli florets cut in half
1 cup of chopped white cabbage
2 Tbsp of gluten free soya sauce
1 Tbsp of black sesame seeds

β™‘METHOD
Remove the tempeh from its marinade and add it to a fry pan with a little water and cook it for 15 minutes. Remove from the pan and set aside. (Keep the marinade to add to vegetables)
In to the same pan, add all the ingredients with the tempeh marinade and 50ml of water. Cover the pan for 10 minutes. After that, add the tempeh to the pan and let it cook for further 5 minutes. Check if the carrots and broccoli are al dente and it is are ready to serve.

RECIPE (for overnight oats 1 serving)
1/2 cup uncooked porridge oats
3 Tbsp of natural plant based yogurt (or any yogurt)
1 cup of plant based milk (or water)
1 Tbsp of ground flaxseeds
1 Tbsp of chia seeds


METHOD
Add all the ingredients to a airtight container. Mix well and put in the fridge overnight and by morning you just have to add your favourite toppings and enjoy it.
In this recipe I used banana, raspberry, peanut butter, dates syrup and pecans.


TIPS: when preparing your breakfast, if you find the overnight oats too thick for your taste, you can add more milk or water.

No Knead Beetroot Granary Bread!!!

Very simple and easy recipe. You can make it with any flour, if granary flour isn’t available. I used organic beetroot powder, as I normally have it at home to add it to smoothies. Alternatively, you can add one cooked beetroot into a blender or food processor and blend it until a puree consistency and use it instead. πŸ₯°πŸ’™πŸ€

RECIPE
550g of granary flour
2 Tbsp of beetroot powder
12g of dried yeast
1 Tbsp of agave nectar (or dates sugar…)
600ml of warm water


METHOD
Preheat the oven at 200 degrees Celsius
Used a bread loaf tin 9×5 inches lined with parchment paper
In a large container, add the flour, yeast and beetroot powder and mix it well. In a separate container mix the water and agave and mix it until the agave is dissolved completely then add to the flour mixture. Mix it well for at least 5 minutes.
Transfer the mixture to the baking tray and let it rest for at least 40 minutes or until it has doubled in size. Put in the oven and let if cook until its golden-brown! Let it coo before slice it!

Ready to go into the oven

RECIPE (makes 6 to 9 portions – great for freezing)
1 litre of water
1 cup of freekeh or brown rice washed
1 onion peeled and chopped
2 celery stalks chopped
3 garlic cloves peeled and chopped
1/2 small white cabbage chopped
2 carrots peeled and chopped
1 courgette chopped
2 Tbsp of chopped parsley
1 Tbsp of miso paste (or salt to taste)
1 tbsp of mixed herbs
Rose Harissa to be added at the table
METHOD
Add the water and freekeh into a large saucepan pan, with all the ingredients a part from the courgette. If you add it to early it will cook too much.
Let it cook until the freekeh is “al dente” then add the courgette and cook it further until its tender. Serve it with rose harissa!!!

Super easy 3 ingredients crackers! You can use any quinoa available. I’ve used mixed quinoa for this recipe. You will see a change in colour after its cooked, depending on the quinoa you use! Great on its own, or with your favourite spread, like oil free hummus!!! πŸ₯°πŸ’™πŸ€

RECIPE
1 cup of raw quinoa (washed and drained)
1 cup of water
1/2 tsp of miso paste (or salt of your preference)
Favourite seeds or nuts (optional)


METHOD
Turn the oven on at 200 degrees Celsius
Lined up a baking tray with parchment paper and set aside.
Add the washed quinoa, water and miso into a blender and blend it until a smooth consistency.
Spread it thinly over the parchment paper and if you want add the seeds or nuts you want. Place it into the oven for about 15 to 20 minutes, depending on your oven. It will change in colour.
Cut it into cracks while it is still warm. Let if cool completely and you can store it in a airtight container.

Bowl of Goodness with easy Pickled Cabbage!!!

Easy lunch kinda day!!! Too hot to spend much time in the kitchen, so I used the frozen food I prepared during the week, apart from the cabbage and red peppers. Pickled cabbage Recipe (serve 3)
1/2 small white cabbage thinly sliced (I used a mandoline)
100ml of unrefined apple cider vinegar
25 black peppercorn
1/2 Tbsp of white miso paste (or salt)
METHOD
Mix the vinegar, miso and peppercorns and then add to the sliced cabbage. Massage/mix it with your hands. It’s best if you can make at least 1hour before serving. It can be done the day before.

RECIPE (makes 18 bars)
2 cups of porridge oats
1 1/2 cups of crunchy peanut butter melted 60 seconds on microwave (or smooth peanut butter)
2 Tbsp of agave nectar (or honey)
2 Tbsp of ground flaxseeds (omega 3)
100g of Vegan Dark Chocolate (optional)

METHOD
Mix the oats, peanut butter, agave and flaxseeds until it forms a dough.
Transfer it to a baking tray lined with parchment paper. Make sure you spread it evenly. Melt the dark chocolate for 60 seconds on the microwave and add over the dough. Sprinkle with chopped pecans!
Put in the fridge until the chocolate is settled. Slice it in bars or squares and enjoy it! It’s great for freezing as well!

Ready to put in the fridge!
Remove from the baking tray and cut it into bars.

RECIPE
3 strawberries washed and cut in half
2 heart of palm sliced (1/2 tin)
1 small gem lettuce washed and sliced
Hand full of rocket leaves
6 pecans
2 Tbsp of plant based natural yogurt
1 tsp of harissa

METHOD
Make the salad dressing by mixing the yogurt and harissa. Then plate up the salad and its ready to eat!
