
Easy lunch kinda day!!! Too hot to spend much time in the kitchen, so I used the frozen food I prepared during the week, apart from the cabbage and red peppers. Thyme and smoked paprika brown rice, beans stew/feijoada, garlic and onion powder kale, marinated and roasted tofu, red peppers, miso pickled cabbage and to top it off, rose harissa and plant based yogurt!!!🥰💙🍀

Pickled cabbage Recipe (serve 3)
1/2 small white cabbage thinly sliced (I used a mandoline)
100ml of unrefined apple cider vinegar
25 black peppercorn
1/2 Tbsp of white miso paste (or salt)
METHOD
Mix the vinegar, miso and peppercorns and then add to the sliced cabbage. Massage/mix it with your hands. It’s best if you can make at least 1hour before serving. It can be done the day before.
