Vegetable Freekeh Soup with Rose Harissa!!!

So simple and delicious!!! You can use any vegetables you have available. If you don’t have Freekeh, you can use brown rice instead! 🥰💙🍀

RECIPE (makes 6 to 9 portions – great for freezing)
1 litre of water
1 cup of freekeh or brown rice washed
1 onion peeled and chopped
2 celery stalks chopped
3 garlic cloves peeled and chopped
1/2 small white cabbage chopped
2 carrots peeled and chopped
1 courgette chopped
2 Tbsp of chopped parsley
1 Tbsp of miso paste (or salt to taste)
1 tbsp of mixed herbs
Rose Harissa to be added at the table
METHOD
Add the water and freekeh into a large saucepan pan, with all the ingredients a part from the courgette. If you add it to early it will cook too much.
Let it cook until the freekeh is “al dente” then add the courgette and cook it further until its tender. Serve it with rose harissa!!!
