Quarantine Veggie Soup!!!

Soup is a great dish to use up left over vegetables. You only have to use your imagination!!! Be creative and transforme some simple ingredients into something delicious!🥰💙🍀

RECIPE (serve 2)

1/2 onion peeled and chopped
2 cloves of garlic peeled and chopped
1 medium carrot chopped
1 medium potatoes peeled and chopped
1/4 white cabbage chopped
1/2 red pepper without the seeds
Handful of chopped kale
Handful of chopped parsley
1 handful of any pasta (using wholegrain fusilli)
1 Tbsp of white miso paste
1 pinch of ground nutmeg
Ground black pepper to taste
Water to cover.

METHOD
Add all the ingredients into a saucepan and let it cook until the carrots and potatoes are al dente, then add the pasta and cook until it’s ready.
